Veggie Lover

These past few months, I have been refraining form eating red meat. It is not as hard as I expected and in fact I have eaten very little meat at all. I have found that without meat, I am left feeling better after I eat. Giving up meat is something I never thought would be possible for me as I am definitely a meat lover. However, with some of the great recipes I have discovered, I am transitioning more from a meat lover to a veggie lover. One of my favorite vegetarian recipes I have found is tofu stir fry. Because I am a big fan of variety, this recipe is perfect. It is so easy because all you really need to do is stick your favorite vegetables (for example: spinach, bell peppers, onions, garlic, etc.) in a pan, add some olive oil and any type of sauce, mix it all up and your done. The tofu adds a source of protein, and this recipe is very healthy, and extremely delicious. Another item that I have been loving is soup. There are so many delicious vegetarian soups and, again, so many varieties. Any soup from chowders, to classic noodle soup has been my best friend this month. All in all, I have surprisingly really loved not eating meat, and I will see how long it lasts. I highly suggest this to those of you who want a change in diet and I am looking forward to seeing what other new vegetarian recipes I will discover.

Comfort Foods

Comfort foods are one of my favorite parts of the colder seasons. Whether its potatoes, mac n cheese, or chicken pot pie, I know that I can always count on a good comfort food to brighten my day ( hence the name “comfort” foods) . The best thing about these so called comfort foods is that they can be very specific and personal to each person. For example I always think about my mom’s famous meatloaf. The reason that these foods evoke such emotion within us is because they bring back memories of a happy time. One common misconception, however, is that a good comfort food has to be fattening. Through a bit of research, I have found that this is not true. Many comfort foods are able to incorporate healthy and nutritious element that add that extra pizzazz to a meal. For example, this butternut squash, kale and quinoa stew is a perfect healthy meal that will fill you up and leave you with that same satisfaction. Although I do try to keep the things that I eat on the healthier side, it can sometimes be nice to splurge on something indulgent. For this, one of my absolute favorites is chicken pot pie, and macaroni and cheese. So if your stuck on what to eat this winter season, try a nice classic comfort food that is sure to bring back memories of family, friends, and good times.

When it comes to cooking, it can be very difficult to keep things neat and clean. While browsing on their site I have found many new tips from organization to how to handle different tasks in the kitchen. One recent post that I found interesting gives tips on how to most efficiently organize small freezers. This is great for anyone who has a lack of space in their kitchen and is looking for a better way to organize their food. ┬áBesides recipes and tips, The Kitchn also gives ideas for fun, easy kitchen related projects. For example they show how to make a super cute kitchen chalkboard. This DIY craft presents a great, inexpensive way to decorate your kitchen. The best part is it looks cute and is also very useful. This can be used to write grocery lists, reminders, or even just draw a cute little picture to brighten your day. I really took a lot of inspiration from this blog and if you want to make your kitchen a fun, and delicious place, I recommend you check it out.

Quesadillas

Quesadillas are one of my biggest go-to snack/meals. They are extremely easy, super quick, and really delicious. All you need is one or two tortillas (depending on how big you want it), and your favorite type of cheese. Then stick it in the microwave or oven and voila, you have yourself a delicious snack! One of my favorite things about quesadillas is that they can be so different depending just on what type of cheese you use. You can use cheddar for a strong taste, colby jack for a mild taste, or my recent favorite, pepper jack, for a more spiced taste. Another great thing about quesadillas is that you can easily add things to it in order to change it up. For example, you can add chicken to the inside for an added amount of protein. Or you can simply add salsa to add some extra flavor. After preparing your perfect combination, and cooking it till the tortilla is golden brow, sit back and enjoy this delicious cheesy meal.
